Apple Pie Oatmeal Pancakes
Serves 1:

½ Cup Rolled Old Fashion Oats
1 Cup Unsweetened Vanilla Almond Milk (or your favorite milk)
4 Egg Whites (1/2 Cup liquid egg whites)
1 Small Apple, peeled and sliced
1 tsp Cinnamon, divided
1 tsp Lemon Juice
1 TBSP Whole Whipping Cream
1 tsp evoo for cooking
In a small saucepan over medium heat, combine oatmeal, almond milk and ½ tsp cinnamon.
While the oatmeal is cooking, peel and slice apple. In a small pan combine apple slices, ½ tsp cinnamon and 1 tsp lemon juice.
Reduce apples (you may have to add 1 tbsp water if pan gets dry) until they are soft. When oatmeal is light and fluffy and all liquid is absorbed, remove from heat and add in egg whites, stirring to mix well.
Heat a small skillet over medium heat with ½ tsp evoo to prevent sticking. Pour half of the oatmeal and egg mixture on to the pan and spread out into a pancake. When the pancake has bubbled and the mixture is almost completely cooked through, flip.
Remove from heat and repeat with the remaining pancake mix. In a bowl add ¼ cup whole whipping cream. Beat until the cream solidifies and peaks.
Serve 2 pancakes with cinnamon apples and 1 tbsp of whole whipping cream. Enjoy!
This is a great recipe to use if you have left over oatmeal. Just add egg whites and pour into the skillet.
If you don’t want to make pancakes, you can just heat the oatmeal and egg whites together in a sauce pan whipping until fluffy to make a protein rich oatmeal.
You can also use any fruit: peaches, strawberries, pears, blackberries are a few examples that would make incredible toppings. If you are dairy free you can sprinkle the top with walnuts or almond slivers for your fat.
