Beef Egg Muffins

Ingredients

1 lb Caveman Blend (Beef liver, Beef heart, ground beef)

6 eggs

2 small poblano peppers, diced

2 small red bell peppers, diced

½ cup onion, diced

1 tsp evoo, plus a little extraSalt, pepper, 

¼ tsp Cheyanne pepper (optional)

6 oz avocado6 TBSP fresh Cilantro

6 TBSP Salsa (optional) 

Directions

Brown and crumble the beef in a hot skillet with salt and pepper.

In a second pan, sauté poblano peppers, red peppers, and onion in 1 tsp of olive oil.

Whip 6 eggs in a bowl and add 6 oz crumbled beef (there will be some beef left over from the 1lb), sauted peppers and onion, salt, pepper, and Cayenne pepper.  

Preheat oven to 350. Divide egg mix into 6 muffin cups. Bake 18-22 minutes until a tooth [ick inserted comes out clean. 

Place a Beef Egg Muffin on a plate with 1 oz avocado, 1 Tbsp Salsa and 1 Tbsp Fresh Cilantro. Enjoy!
