15 oz Fresh Caught Cod, diced into fingernail size pieces
(you can use any fresh white fish or even shrimp if
desired)
4 Tomatoes on the Vine, deseeded and diced small
1 medium English Cucumber, diced small
1/3 Red Onion, diced small
1 cup Lime Juice
4 TBSP Fresh Cilantro, chopped
1 tsp Salt
1-2 Jalapenos (depending how spicy you like it)
2 tsp Hot Sauce (optional)
Directions (Parsley Potatoes)
Juice limes and place in a large bowl. Dice cod and mix in with lime juice to sit while the vegetables are being diced. Dice all vegetables and cilantro and
add them to the cod.
Sprinkle with salt. Mix well.
Place in refrigerator for 45 min-2 hours before serving to allow the lime to cure “cook” the cod.
Serve over a bed of greens, with avocado, hot sauce, fresh cilantro and your favorite chips.
