Parsley Mashed Potatoes and Parsley Pureed Cauliflower Mash

Ingredients (Parsley Mashed Potatoes)

1 lb Potatoes

1 tbsp ghee

1 tsp salt

½ tsp pepper

1 tbsp dried parsley

1/3 cup chicken broth

Directions (Parsley Potatoes)

Dice potatoes (skin on or off, depending your preference) and boil until soft

Place potatoes in a blender with ghee, salt, pepper, dried parsley and chicken broth

Blend until smooth

1 head of cauliflower

¼ cup chicken broth

Directions (Parsley Potatoes)

Cut head of cauliflower into florets and steam for 20 minutes, or until tender.


Place cauliflower in blender with ghee, salt, pepper, dried parsley, and chicken broth.


Blend until smooth.
